One Pan Garlic & Lemon Seasoning Chicken Roast

What’s a better way to woo a loved one than a home cooked roast? This meal is super easy to prepare and is so delicious they will be loving you forever. The lemon pepper seasoning from Green Valley Spices not only gives the chicken an amazing flavour but it also makes the skin super crispy, the chilli oil is delicate and adds to the beautiful flavours of the roast.
  • 2 ½ tbsp Lemon Pepper Seasoning (Green Valley Spices)
  • Whole Chicken (Chicken George)
  • 3 cloves Garlic
  • 1 Lemon
  • 1 cup Parsley
  • Chili Oil (Pepper & Spice – Green Valley Spices)
  • Brussel Sprouts
  • Carrots
  • Sweet Potato
  • Potato
  • 4 tbsp Butter

  1. Wash, pat dry and butterfly chicken. Squeeze and rub lemon on the inside to clean.
  2. Add together in a bowl butter, garlic, parsley, lemon pepper seasoning, pepper and salt. Mix till combined. Pre heat oven at 180 degrees on fan cook.
  3. Separate the skin of the chicken and stuff butter herb mixture inside as well as rubbing it all over the chicken. Drizzle with olive oil and remainder of lemon juice. Sprinkle salt and pepper on top. Place chicken in oven for 30 minutes.
  4. Chop up veggies and leave in bowl with drizzled with olive oil, salt and pepper.
  5. After 30 minutes place veggies around the chicken and drizzle with chilli oil. Cook for a further 40-50 minutes or until chicken skin has browned and veggies are roasted.
