Strawberry Gelato


  • 150g caster sugar
  • 1 tablespoon cornflour
  • 250ml full cream milk
  • 160ml thickened cream
  • 380g ripe strawberries, cut into slices


  1. Place caster sugar and cornflour in a heavy based saucepan. Whisk cornflour into the sugar.  Stir in milk and cream.
  2. Cook over a medium heat, stirring continuously until the mixture thickens and starts to simmer.  This will take from 5-10 minutes.  Remove from heat immediately.
  3. Place custard mixture into a bowl and place in the fridge to chill completely.
  4.  Once the custard mixture has chilled and is ready place strawberries in a blender and blend. Once the strawberries have formed a smooth puree, pour through a fine mesh sieve into the custard.  Use a spoon if necessary to push the puree through.
  5.  Stir the strawberry puree completely into the custard mixture.
  6.  Place ice cream mixture into an ice cream maker and follow the manufacturer’s instructions for churning.  Once churned, place in a container and freeze for at least 2 hours.
