We've put together a few fresh and fruity cocktails for you to try out this season.
Watermelon and lime punch
Ingredients:
2 limes
1/4 cup coconut sugar
1 cup mint leaves
1/2 watermelon
1 cup vodka or lemonade
1/2 cup orange juice or liqueur
1L raspberry mineral water
Step 1
Place lime, sugar, mind and half the watermelon into a bowl. Use the end of a rollng pin to crush.
Step 2
Add vodka or lemonade, orange liqueur or juice, and the remaining chopped watermelon. Stir until combined.
Step 3
Pour over mineral water and serve in glasses with ice.
Peach and Prosecco Punch
Ingredients:
200g sliced peaches
2 tbs caster sugar
2 tbs lemon juice
1.5L rose prosecco or raspberry mineral water
Step 1
Combine peaches, sugar and lemon juice in a saucepan. Cook over a high heat, stirring for 5 minutes until sugar dissolves.
Step 2
Strain mixture through a sieve, using the back of a spoon to press as much liquid through as possible. Discard solids.
Step 3
Pour mixture evenly among serving glasses with ice and top with prosecco or mineral water.
Berry Fizz
Ingredients
60g strawberries
60g raspberries
2 limes
1.25L raspberry kombucha
1 cup pink gin (optional)
mint leaves to serve
Step 1
Place berries in a food processor and process until smooth.
Step 2
Strain mixture through a fine sieve, using the back of a spoon to press as much liquid through as possible. Discard solids.
Step 3
Juice 1 lime and thinly slice the other.
Step 4
Add kombucha, gin (if any), lime juice, sliced lime and berry puree into a jug with ice. Stir well to combine.
Step 5
Divide among serving glasses and top with mint leaves and extra rapsberries.
